Nevermind that The Kitchen without Borders, a collection of Recipes and Stories from Refugee and Immigrant Chefs, was created by the very refugee and immigrant chefs it features. The cookbook is an extension of Eat Offbeat, "a catering company staffed by immigrants and refugees who have found a new home and new hope through cooking." And also nevermind that The Kitchen without Borders publisher, Workman, is donating 2% of the cover price for every copy of the cookbook sold between March 1, 2021 and March 1, 2022 to the IRC nonprofit humanitarian aid organization.

What you should be minding is that The Kitchen without Borders has recipes for Fattoush and Momos in it. The former is the most delicious salad I ever ate, highlighted by a dousing of sumac and pita chip croutons. The latter are Indian-style dumplings I could pretty much eat until my belly bulges and ripples and itself starts to look like an Indian-style dumpling. You've also got Middle Eastern hand pies, Venezualan Cachapas (corn cakes!) and Nepali Chari Bari Meatballs.

Basically, The Kitchen without Borders will take you around the world in 70 dishes, every one of which sounds like a flavor rainbow that's gonna pop you in the palate with a left hook of spices. Mmmm, can't wait to give this as a Mother's Day gift to my mama so she can get cookin'!
